2 dates (dried and pitted) (~½ oz)
6 cashews (~¼ oz)
½ cups rolled oats (uncooked) (~1 ¾ oz)
1 lemon (~2 oz)
1 ½ tsp poppy seeds (~⅛ oz)
¾ tsp honey or agave syrup (~¼ oz)
¼ cups water
2 tbsp protein powder (~¾ oz)
2 ½ tsp peanut butter (plain, without added sugar) (~½ oz)
optional: a tiny bit of salt
optional: ½ tsp vanilla extract
Wash lemon and grate zest. Squeeze lemon.
In a bowl or food processor, combined the protein powder, oats, poppy seeds, honey or agave, lemon zest, dates, cashews, salt and vanilla. Add in the lemon juice, peanut butter and water, stirring until fully incorporated.
Store in the freezer for 10 minutes (or in the fridge for 30 minutes). Form energy balls out of the mixture and enjoy.
